Fall means truffles and Barolo in Piedmont, Italy. To celebrate here in Boston, Chef David Cavilla has designed a special one-night only menu featuring both the revered white truffles from Alba and black winter truffles (also known as black Périgord truffles or “black diamonds”) from Burgundy, France.
Handmade pasta and tender veal breast are perfect foils for the complex yet delicate flavor of truffles. By offering both of the world’s most prized truffles in one dinner, guests will be able to savor the subtleties of each variety; with Barolo & Barbaresco from northern Italy, paired with regionality in mind by award winning Wine Director, Cat Silirie.
